The April meal plan is being kept as simple as possible, but yet having a variety. With the current situation with COVID-19, you have to stretch your meals and make as much use of pantry items. Having a detailed shopping is even more important during this period.
In this months meal plan I am also adding some dessert/snack ideas you can make with minimal ingredients.
Week 1 (1st – 5th April)
- Filled Artichokes
- Chilli con Carne (already in freezer)
- Froga tat-Tajra
- Homemade Pizza
- Lasagna
Week 2 (6th – 12th April)
- Left over lasagna
- Beef Stroganoff
- Freezer Friendly Baked Ravioli
- Garlic Butter Chicken Bites
- Pasta w/sauce
- Burger in Buns
- Lamb leg
Week 3 (13th – 19th April)
- Left over lamb leg
- Slowcooker BBQ sweet & sour meatballs
- Omlette with salad
- Meat with breadcrumbs
- Filled Artichokes
- Hot Dogs
- Shepard’s pie
Week 4 (20th – 26th April)
- Left over Shepards Pie
- Sweet & Sour pork
- Freezer Friendly Baked Ravioli
- Cauliflower fritters
- Tortelli w/pesto sauce
- Burger in Buns
- Baked Macaroni (Mqarrun)
The baked macaroni recipe is vegan however you can make it with ground beef

Week 5 (27th – 30th April)
- Left over baked macaroni
- Beef Stoganoff
- Tacos
- Garlic Butter Chicken bites
Desserts / Snacks
- Crockpot Candy (this cannot get easier. You can only use two ingredients roasted peanuts and chocolate)
- Peanut Butter Energy Balls
- Doughnuts
- Apple Pie Roll Ups
